Description

TERROIR & VITICULTURE This is a cool area, situated 12-20 km from the sea, with mean February (ripening stage) temperatures of 19-20°C. Soils are predominantly ferruginous (iron rich) gravel on highly weathered, soft Bokkeveld Group shale, situated at 200-300 m altitude and surrounded by Table Mountain sandstone mountains at heights of about 500-1 000m, sheltering the area from the often extremely strong south-easterly winds in summer

WINEMAKING NOTES This premium red blend consists of Merlot and Shiraz. The Merlot grapes were destemmed and whole berries fermented in stainless steel tank. Pump-overs were done twice daily, to allow a soft, gentle extraction of fruity flavours and tannins. The Shiraz was whole bunch fermented in open top wooden fermenters. Punch-downs were done twice daily to release the juice from the crushing of the berries. After fermentation, pressing followed and then the 2 wines were blended post-malolactic fermentation and aged for 6 months in tank with a combination of specially selected oak staves originating from various forests in France.
